    Default Taco night / I miss the crunch

    My friends want to do a taco night.

    What kind of whole leaf crispy lettuce would yall suggest to make a wrap with all the fixins to keep the carbs low?

    What kind of yogurt is the closest to sour cream?

    Any other suggestions?

    Greek yogurt plain. They do make low carb tortillas and post sleeve with the protein of the meat, cheese and yogurt you won't be able to even eat half. For the crunch factor I like to take 5 Ritz baked crackers and put my meat and cheese on them.

    Romaine Hearts give a nice crisp texture. I personally prefer lettuce wraps with bibn or butterhead lettuce. It's darker and has a bit more iron than romaine, plus it has a fabulous texture. Also, while you might not watch carbs, it has 1 less gram of carbs than romaine.

    If you like to have lettuce wraps, I highly recommend this recipe:

    I eat it with romaine hearts or bibb lettuce. I don't make the special sauces, and I skip the mushrooms if I do not have any on hand. If you marinade the chicken in some buttermilk for 2 hours, or a marinade of orange and lime juice, the chicken is super tender and goes down amazingly fabulous without changing the taste of the recipe.

    Non-Fat plain Greek yogurt is a fabulous substitute for sour cream. I also mixed my chicken, egg, tuna salads with greek yogurt and a little dab of ranch or italian dry dressing packets. Fage is creamier and closer to sour cream consistency than the generic brands or Chobani. But, I love Chobani mixed with sugar free pudding powder. The white chocolate flavor of pudding mixed with greek yogurt is very close to cheesecake consistency, and flavor is fab.

    Wow, you all are so much better than I am. I figure that I can only have one taco, so it's ok to have the carbs in one taco shell. You can't do completely without carbs, and really how many tacos can you eat?

    I think the taco shells are a pretty good return for the calories. Don't
    worry too much about the carbs. For me the calorie count in foods has
    been more important to weight loss than the carb count. Most people
    underestimate the carb content anyway.

    Guess what I just had for dinner? Chicken lettuce wraps!!! Thanks again for the recipe USAFWife! My husband was kind enough to make them for me. I made him cut the sugar amount in the "secret sauce" by half...and I didn't use much. Now I have to go figure out the calories/protein, etc. for the amount that I ate.

    I can't do the wraps, I get sick everytime I try one, it feels like it gets stuck, but I can eat a half of a regular taco and I do fine with it.
