i saw a thing online where they baked an egg in an avocado, and decided to expand it a bit.
the basic recipe is you take an avocado (haas) and crack an egg in there where you remove the seed from and. bake at 425 for 18 or so minutes and if youre feeling frisky put some cheese on top. i was leary about hot avocado, but tried it and it was great. nice for bfast or even dinner and its decent with protein. the thing that pushed it over the top is the sams club santa barbara mango peach salsa.
side note - its nice to go to sams club - get a few samples and be full but i digress..
the salsa is sweet with a little kick and really livens up the food. i added a spoonful to the top and it really complemented the dish and i loved it
