    Default new food/recipe for me - egg avocado w/ mango/peach salsa

    i saw a thing online where they baked an egg in an avocado, and decided to expand it a bit.

    the basic recipe is you take an avocado (haas) and crack an egg in there where you remove the seed from and. bake at 425 for 18 or so minutes and if youre feeling frisky put some cheese on top. i was leary about hot avocado, but tried it and it was great. nice for bfast or even dinner and its decent with protein. the thing that pushed it over the top is the sams club santa barbara mango peach salsa.

    side note - its nice to go to sams club - get a few samples and be full but i digress..

    the salsa is sweet with a little kick and really livens up the food. i added a spoonful to the top and it really complemented the dish and i loved it

    That sounds delicious. I need to find more ways to eat eggs. I was into deviled eggs for a while but it's such a pain peeling them that I'm over it. Well that and the one egg that still had the film on it grossed me out.

    So do you slice those avocados length-wise?

    i do - and i think it also depends on the avocado size - just cut however works best. i also found that larger eggs arent better since much of the white will just overflow. i am trying to get a perfect soft-boil for the egg so you may adjust the time based on how you like your eggs... but to me 20 mins makes them pretty well done.
