Well, my doc had me on puree for a month, and soft foods for three. Soft, not puree. So I can eat almost everything, just nothing particularly crunchy or those big dry meats. To be honest, I have tried things outside of the req's but found I couldn't handle most of those things anyway. They told me a lot of their recommendations come from listening to the experiences of their patients. For the puree and soft foods their rec's are more about preparing patients for what they'll be able to tolerate than about leaks. most of the danger of leaks comes in the first two-three weeks according to my doc. Other than that, the biggest worry from my doc is carbonation and vitamin/protein intake. Carbonation really can damage the little baby stomach, and not getting your vits/protein can cause long-term issues.
Again, all that came from MY doc. I can't say this enough. You should really listen to your own doc. If you follow yours and something goes awry your doc will know how to fix it. If you follow my doc's rec's your doc won't know what's causing an issue.
