That all sounds soooo yummy girl!! So the mushrooms sat well with you? You just cooked them down a lot??
I love your ideas, RockvilleGirl. I think it is a good idea to get the "biggest bang for your buck" so to speak. Our intake is so limited, I would think it wise to eat something very satisfying and yet also healthy. Use your allowed ounces of food for something so good, not useless empty calories or unsatisfying meals.
I think the tilapia would work if the tuna is working. My doctor allows soft flaky fishes and crab meat on the soft foods stage. To make the stuffed mushrooms I used the crab meat, a littel bit of light cream cheese and some parmesan cheese along with some seasonings and some onions that I sauteed the heck out of to get them soft. I removed the stems, then while sauteeing the onions in a little olive oil I sauteed the mushrooms some as well because I was worried they wouldn't get soft enough in the oven, but I really only cooked them for maybe 2 minutes per side. Then I stuffed them and baked them for about 15 minutes in the oven. LIke I said though I could really only eat one at a time though.
