- I have been a diabetic for 9 years taking over 135 units of insulin a day along with having thyroid disease. I had my surgery a year ago, and I am down to taking approx. 2 to 3 units of insulin a day, and completely off my night time insulin. It has been amazing.

Happy Holidays to everyone! So last night...I thought I would try some lactose free low cal egg nog....big mistake...my husband held my hair back while I threw up five times. First of all, after surgery I found out I was allergic to egg whites and milk. I don't drink milk, except for soy or lactose free now. I still eat eggs though from time to time. Today I talked to my mom, who is a nurse and very health conscious. She gave me a great recipe that fits into my 7-49 days of my post op diet plan!!!
Oatmeal Pancakes
Old Fashioned Oats (no instant oat meal)
low fat cottage cheese or tofu
cinnamon
nutmeg
vanilla extra for flavor
It makes one big pancake that's 240 cal, 34 carbs, 24 grams protein. This is way too much, but if you make 5-6 mini oatmeal pancakes it comes out
