Mushrooms & Peas!

    I have this entered on SparkPeople.com (hence the nutritional values at the bottom!)
    Very simple but YUMMY side dish (since our serving sizes are so small post surgery, I actually eat 1/2-1 c. as a meal in itself).

    Drizzles extra virgin olive oil
    1 small onion, chopped
    2 cloves minced garlic
    4 oz. white mushrooms, sliced
    10 oz. pkg. frozen peas, cooked
    1/2 tsp. thyme
    1 pkg. sweetener
    Salt or salt substitute and black pepper to taste

    Prepare frozen peas according to package directions.
    Drizzle olive oil in nonstick skillet. Add chopped onion and minced garlic; sauté about 2 minutes until translucent. Add sliced mushrooms, peas, thyme, and sweetener. Reduce heat, cover and simmer until veggies are tender. I like to add ground black pepper as well!
