I thought I would share a salad I make. This makes quite a bit but I have 3 kids and a DH that also eat it.
1 can lentils, drained and rinsed
1 can chick peas, drained and rinsed
1 can crabmeat, drained
1 can salmon, drained
1 can pitted, black olives, drained
feta cheese, cubed
cucumber, cubed
tomato, cubed
bell pepper, cubed (today I used red)
your favourite mushrooms
other favourite vegetables - today I used snap peas, cut into thirds
Kraft Calorie-wise Greek Dressing with Feta
I add all the above into a very large bowl, then add about 1/4 to 1/3 of a bottle of the dressing. I've changed things up like adding shrimp instead of salmon, changing the veggies, or even the legumes. Be creative.
This can also be adapted to those on the soft-food stage. Just steam some veggies (broccoli, cauliflower, etc) before and chill them with cold water.
One teacup fills me right up.
