    Default Almost off...

    About two more weeks and we are off for a 2,5 month long trip.
    Off to the utmost northern part of the European continent, at the Barents Sea, about 600 miles north of the Polar Circle.
    Hopefully the weather stays good and we won't get snowed in.
    We're planning on doing much hiking, seeing the most magnificent wildlife and of course, auroras!
    We have been in the Sahara Desert and now we want to see the other side.

    I am planning and prepping as we speak.
    There won't be fresh produce for sale and I only have a very tiny freezer.
    I think the best course of action is to buy fresh veggies wherever I can and stir fry them.
    Stir fried or roasted they take up less space in the freezer I think.
    I'll stock up on beans, lentils and brown rice.
    Any more suggestions?

    Have so much fun! Take pictures! You're going north and we're going south (to winter!) I'm going to eat as well as I can, but not really stress about it, as I'll be hiking a lot. Plus most of our meals will be taken care of by the tour agency.

    Here's my flight schedule for today/tomorrow: Missouri-Detroit-Amsterdam-Tanzania. All in economy because I'd rather use that extra $$$ on another vacation. Plus an NSV - now that I'm smaller I can squish.

    Don't worry about your food, you'll be fine those couple of weeks.

    How exciting, Dutchie!

    I hope y’all have a marvelous time with much adventure and excitement. The Auroras are breathtakingly beautiful. Please take many pictures to share with us.

    Do you have single serving pouches of tuna, salmon, chicken, turkey available? These are a must in my travel kit. Also, single serving bone broth. Roasting and freezing veggies is a great idea!

    With limited space, I single serve a lot...cottage cheese, yogurt, refried beans, low sodium v8 juice, no sugar added fruit cups, jerky -just to name a few lol ;-)

    I hope you will have a wonderful trip!!

    Before a long trip or just going back for one year overseas, I always start with meds/supplements and all the things I can't or won't find where ever I'm going. For sure I always carry epipen, basic first aid (rehydration solution) and basic meds (with things for eyes always, to wash and even a basic eye antibiotic), but also when we are going to walk around I always get those special bandages for blisters, can't find those everywhere.
    Also sun screen is always in there too, at least I know brands that work..

    For food, I usually pack organic tablets of broth, almonds, dry food (lentils or beans are sometimes hard to find) flour, yeast to bake and make breads, vanilla or spices I can't find later (specific spices : French herbs de Provence or just thym, organic curcuma ) etc...depending on the size of the suitcases! During those three years in Asia I usually always came back from France or the US with a large suitcase full of food...never forgot some of our fav chocolate...not too much but I usually gave away at least half to friends, kept only a little...

    I am sure that will work.
    I'll also stock up on oatmeal, I use that to make my own muesli/granola kind of thing, which we can eat with yoghurt.
    I also put that in my Nutri Bullet and make oat flour, which I use to bake breads, muffins (with blueberries I pick in the woods, they are in season) and oatmeal cookies.
    I also will pick cranberries, and make a few batches of cranberry sauce, which we can eat with veggie meatballs and boiled potatoes.
    I have dried tofu crumbs that I use to make "ground beef", so I can make a few batches of pasta sauce in my slow cooker when we are driving.
    And what I lack in fresh produce and vitamins I will survive on my vitamin supplements, I am sure.
    It is just for a week or five, I should be okay.

    I have written down your ideas Sandra, so I don't forget anything.
    I always have our medication for a couple of months with me, so no problem there.

    Also I got a lot of ideas from you Cyndi, thanks!
    The refried beans I can make in my slow cooker from scratch, also a large batch, great idea!
    Unsweetened fruit in cans or cups are also great and I certainly must not forget the V8 juice!
    I think I'm gonna be fine, overworked before I even get there, but fine nevertheless...

    In France tablets are really cheap (1€ per box) but in the US a little more expensive

    Simonne you live an amazing life full of wonderful travel and adventures!! You are soooo lucky! I cannot imagine ever getting to the point where I would be able to afford to go off and travel for 2 1/2 months straight. SO fantastic!! Take a ton of pictures.
