    Default A couple of things to eat at the soft food stage

    I thought I'd share some recipes I liked for that stage after pureed foods, aka soft foods.

    Mexi Dip

    1 Can Chicken Breast
    3 T Refried Beans
    1/4 C Rotel Chilis Regular or Mild
    2 T. Low sodium Taco Seasoning
    2 T. Chicken Broth

    Mix all ingredients together. I put mine in a sauce pot and mix until heated through. You could mix and bake in pie pan at 325 for 15-20 or until bubbly too.

    Top with fat free Sour Cream, Salsa, fat free cheese.

    Shrimp Cocktail

    I LOVE eating shrimp cocktail. I make my own cocktail sauce as the store bought is loaded with sugar. I just use sugar free ketchup and horseradish sauce and 1 t. old bay seasoning. I use lots of fresh lemon slices too.

    Talapia Fish Cakes

    12-16 oz Talapia fillets (can use other type, cod, halibut, etc.)
    Salt & Pepper to taste
    1/4 fat free mayo
    1 T. Dijon Mustard
    2 Eggs (beaten)
    3/4 C Whole Wheat Panko Bread Crumbs
    1 t. Old Bay Seasoning for seasoning fish
    1 t. Old Bay Seasoning to use in wet mixture
    1 1/2 t. dried dill or 2 T. fresh dill shredded
    1 t. horseradish sauce (I use more because I like an extra kick)
    2 T. fresh squeezed lemon juice

    Season fillets with salt, pepper to taste and 1 t. old bay seasoning. Bake at 400 for 12 minutes. Cool and flake. Set aside.

    Mix together remaining ingredients except Panko crumbs. Beat until mixed well.
    Add fish and panko crumbs. Form into 8 small patties. Cool in fridge for at least 30 minutes.
    Heat 1 T Olive/or Avocado Oil in pan to medium heat . Add patties to pan in batches and cook 3-5 per side until brown. Drain on paper towels. I only make 4 at a time and save the other 4 for the next day.

    Serve over a salad mixed with 1 t. Dijon mustard, 2 T. Olive oil and 1 1/2 T red wine vinegar dressing.

    I've enjoyed these I hope you do too. I'm always looking for something easy and different to fix. I love to cook and there are tons of bariatric recipes out there on the net.

    Great! I just started this phase and I think I'm going to try the Mexi dip today. I have all of the ingredients on hand except the Rotel chilis - which may be a good thing as my tummy is so sensitive right now. Thank you for posting these!

    Oooooohhhh..... tilapia cakes! That sounds amazing and a wonderful way for me to trick my younger 3. They HATE salmon (I think just because they know it's fish) but will tear up a salmon patty with ketchup. It's funny cuz I can make food with mushrooms in it and they don't notice it unless they see me preparing supper. They lived with their granny before I got them and they ate lots of processed, microwaveable meals. Introducing them to healthy foods was a challenge. Black eye peas & greens were super hard to incorporate in their diet. I didn't let them rule the roost and now they request healthy foods. I'm definitely going to try the tilapia cakes. Thank you girl!

    HAHA yes, sometimes you do have to resort to trickery with those little ones, but I say all is fair in love and health. Super easy to make and I hope you like them, you could probably use canned salmon too.

    I'm definitely going to try it! Most times, I just say "Eat it because I said so" but sometimes trickery is easier. Lol
