Seafood is my favorite, I should live in Australia! But I guess my favorite American food is Pizza. (Technically Italian I guess.). Also love all the new tacos they are making these days. And back to seafood, the fish tacos are my favorite.

The cool thing about living here is the blend of cultures and the new things to try. Living in San Francisco was the best. Our neighbors were from Italy, and wow, their food was amazing. (Just the smell of them cooking dinner...). My son's best friend was Chinese and he used to complain that I couldn't cook like Calvin's grandma.

Yes seafood for sure, I love the multiculturalism of Australia too, we are lucky with that. I know there is a big HIV conference coming up in San Francisco either next year or the year after so I'm hoping for a visit :-)

Since Texas was once a nation, any food that originates in Texas is a national food....right?

If so my favorite national food is..........Tex-Mex.

That is followed by ribs slow smoked over pecan.....no sauce.

That is followed by chili......no beans. Beans are for Yankees.

In Texas, we don’t usually put sauce on smoked meats. It masks the flavor of the meat and the smoke. We’re particular like that.

Now for the Texas national religion.......Tex-Mex.

Tex mex is Mexican food, but with a Texas twist. It’s spicier than authentic Mexican food and very sauce based. Tomatillo, Ancho, and Habanero peppers are very prevalent in the sauces. When folks come to Texas, the two things they want to eat are bar b que and Tex mex. The great thing about being sleeved is that I can Oder fajitas or an enchilada plate and eat on it for a couple of days. Like all spicy food, the longer you let it “marry”, the better it tastes.

Now I’m going to have to go get a plate of enchiladas for lunch.....followed by another favorite Texas food......pecan pie.

    ‘Nuff said.

I went to 3rd grade in Shertz Texas and I still remember the enchiladas I had. I ordered them every time we went. The best ever!
