    ingredients MAKES 18 2 cookies is a serving, 174 calories 5 protein 3.2 carb 16 fat

    2 tablespoons real butter (I leave this one out)

    2/3 C all natural peanut butter (or your choice of nut butter)

    1C unsweetened all natural shredded coconut

    4 drops of vanilla stevia (or sweetener of your choice) (I use powdered stevia)

    Note* if using a granulated sweetener add it to the butter when microwaving to melt.

    1 TB cocoa powder (optional)

    Instructions

    In a microwave safe dish, melt butter.
    Stir in peanut butter until smooth. If you chose to make these with cocoa powder, add it now.

    Add stevia and coconut. Mix well.

    If you chose to make these with cocoa powder, add it now. (I add a few walnuts and omit the regular butter) and sometimes a little bit (1/8 C sugar free chocolate chips.)

    Freeze about 10 minutes, and then keep in sealed container in frig

    I forgot! I use 1 - 1 1/2 C steel cut oats....to be able to form ball. Depending on where you live you may lightly soak them to mix. Our area is very humid...
