I was looking for inspiration to make fish tacos for tonight's dinner and found this recipe : http://www.eatingwell.com/recipe/249...on-soft-tacos/
I had salmon patties from Costco so I substituted for fillets and pan sautéed with lots of onion, a small potato (I have a teenager in the house this summer so it helps to expand servings, and reduce fishy taste).
I used my bullet to make the salsa from home grown tomatoes and serrano chiles, onios, cilantro and salt! I made the Cilantro Crema by substituting sour-cream with nonfat greek yogurt and two small avocados. I made a cilantro dressing by diluting with lime juice for the Broccoli slaw.
For those looking for a low-carb dish skip the tortilla (and potato) and just serve in a bowl.
