    Default Vegetables Went Down With No Problems at 2 Months Post OP

    Last night I made the family tostados and tacos for dinner. I knew I couldn't indulge in that but wanted to have some taco meat and pico de gallo so bad, just for the flavors, so I made my own version of a taco... minus the flour and corn tortilla.

    I put won ton wrappers into cupcake tins, baked 2 minutes, then placed 1 tbsp. of cooked taco meat into each won ton, popped them in the oven for 3 minutes and took them out. I took two (could only eat one) and put a couple of teaspoons of pico de gallo, a teaspoon of guacamole and a tiny blob of light sour cream on it and enjoyed it so much. I also had made a cucumber salad (cut up into tiny pieces), some red onion, avocado and feta cheese with a little fat free Italian dressing. I took about 1/4 cup, only ate half, but it was delicious and I had NO problems with any of it.

    I never had any issues with veggies. Not even lettuce, which gives a lot of people issues.

    Have you tried paleo tortillas? Love them!

    Also, vegetables are definitely easier to digest for me, so I caution you to be careful you don't start eating more vegetables than denser protein, I mean unless you're a vegetarian and know where to get the most proteins from :-)

    Paleo tortillas? I'll have to look into those. Right now I am just going to stick to my few vegetables I am eating. Tonight will be my steamed broccoli, haven't tried that yet, and have been craving it. Probably only be able to eat 2 or 3 florets... if that, but I'll take it.

    I have had lettuce on my tuna sandwich and it was so GOOD, and it went down fine. I had no problems at all.

    Congratulations on eating your veggies. I love veggies! At 2 years and 10 months post-op I'm now eating 7 veggies and fruits a day. A "bad veggies/fruits day" is when I get only 5 of them eaten.

    Eating this many veggies/fruits a day has been one of my biggest NSVs post WLS, since it was one of my goals post-op to "eat like a healthy person."

    It's taken me a while to get up to this healthy level of veggies and fruits and takes some daily planning to get 'em all in. But I feel great. My digestion is good. All the fibrous veggies/fruits make me feel so full. And if you avoid the ones highest in sugars/carbs, e.g., white potatoes, bananas, etc. and focus on high-fiber colored veggies and the high-fiber fruits, e.g., berries, apples, the carbs in those aren't very bad either. So it's a win-win-win for me.

    I will say, however, that I'm not big on lettuce post-op. My favorite lettuce now is Romaine because it's so substantial and crunchy, compared to most other lettuces.
