    Default Overnight Oats

    It's been a long time since I've posted. I'm almost a year post-op and down 74#'s
    Forgive me if anyone has posted this recipe already. I just love it and it's worth sharing (or re-sharing!)

    One of my and my family's favorite meals:

    Overnight Oats.
    You can use any type of fruit you like/tolerate
    You can switch almond milk for skim or soy.
    You can use any type of natural nut butter you like (almond, cashew, peanut).

    Use mason jars:

    1/2 cup old fashioned oats
    1/3-1/2 cup of 0-fat plain Greek Yogurt (we use vanilla bean instead of plain)
    1/3-1/2 cup of almond milk
    1/2 cup berries (strawberries, blueberries, raspberries, blackberries) - I use a combination.
    1 TBSP natural nut butter
    Honey (drizzle)

    Assemble as listed. Seal. Refrigerate at least overnight. Mix it up when ready to eat. Will keep up to several days.
    Perfect balance of protein, carbs, fat.

    Soaking oats and seeds is exceptional beneficial for our gut health.

    Here is my homemade muesli recipe you can soak overnight and add nonfat yogurt or your preferred milk/substitute.

    1c thick rolled or steel cut oats
    1c sunflower seeds or pumpkins seeds or both
    1/2c quinoa
    1/2c flax seeds (crushed)
    1/2c shredded coconut
    1/4c chia seeds

    Mix all ingredients in an airtight container. Serving size is 1/4 cup.
    I like soaking 1/4c in pure water (about 2cups worth) with a cinnamon stick, I read somewhere that you are supposed to discard water, but my daughter uses it.

    Makes about 13, 1/4 cup servings. It will expand and you probably will not finh it, but for tracking sakes I created 1/4c serving which is approximately 190 calories, 6.8g protein, 10.8g fat, 18.5g carbs (-6.5 fiber: 12g carbs). I normally eat just half one day and the other the next or as a snack later.

    I like adding 1/4 cup of coconut milk and chopped dates and chopped apples to it... keep in mind these are added calories.
    HW: 245lbs (11/15); SW: 226lbs (5/17/16) - Height: 5'6"

    Thanks SweetCaroline for sharing the recipe...I used to prepare just basic oatmeal stuff but with your recipe it would be a lil bit exciting to oats. Thanks
