    Chicken Bibimbap: the most perfect food!!!

    If you are eating out, I hope you come across a mom and pop Korean Food restaurant like the one I found today by happy chance.

    Servings aren't gargantuous, and they are definitely cooked fresh from scratch.

    Bibimbap has always been a favorite dish of mine, but because it's made with rice (actually bibimbap means mixed rice) I have shied away from it post op. But today, I asked if I could hold rice and my server was happy to oblige! But because I like my bibimbap in the hot stone she said it has to have rice. She offered brown rice instead and when said if she could just serve me 1/4-1/2 cup serving, she said sure!

    The rice is place on bottom of hot stone, where a layer crisps and the pickled and steam vegetables, and chicken (or beef or pork or tofu) are placed beautifully on top of the rice and they crack a raw egg to finish cooking.

    Korean custom is that you mix it all up with hot sauce so the egg cooks before you take first bite.

    I mixed my veggies and chicken and egg and avoided the rice at all cost, there where a few stragglers but it was delicious!

    I think all in all I ate about a cup of chicken and vegetables, including a few tablespoons of kimchi, before that alarming full feeling came. I packed the rest which was less than a cup without the rice, most of it was stuck on the pot. Before I would have scraped every single grain lol!

    As I left the nice lady said "come back soon!" and I said thought oh goodness you're my new best friend!

    After that I got a call from my new Bariatric post op care facility, we talked about the main things they can do for me post op. Nutrition, exercise and mental health support along with however many labs I am willing to pay a year, since my new health care exchange insurance doesn't cover bariatrics

    I have sent their highly recommended therapist a request for an appointment.

    so happy to hear that bibimbop is a possibility after the surgery!

    i'm korean so i was worried if i'd b able to enjoy it ever again.

    Yes, it was my first time post op, though I have had store bought kimchi a few times on my plain grilled chicken to change it up.

    My nutritionist said that if I didn't have any adverse reaction that it would be okay to try pickled and fermented vegetables at about month 3-4. I have very rarely and had just a tiny bit here and there. I'm worried about developing acid reflux.

    Check with your surgeon and NUT as to when you may be able to eat some of your traditional foods.

    I am from Guatemala, so I grew up with lots of spices, textures and flavors! Pre op I loved all spicy cuisines, but post op I'm being more cautious and my food can get pretty boring and bland.

    are you able to tolerate rice? Is the reason you left out the rice because of the carbs or because your sleeve can't digest it really well?

    We Koreans are huge rice eaters. I hope I am able to still eat rice because then at family gatherings i'll be the oddball LOL

    If you are able to eat it, how much can you eat at max? half cup or whole cup? Thanks

    Opted to not eat rice because of carbs unfortunately I can digest whole grains and rice just fine. No adverse effects at all.

    I eat whole and sprouted grains a few times a week. Complex carbs are essential for healing and overall health and mood, my NUT tells me. I try to get my complex carbs and fiber from mostly non starchy vegetables, and concentrate on eating protein first.

    I have eaten a few tablespoon full of brown rice, but that's about all. Mostly because I have eaten oatmeal, quinoa, lentils and other legumes as well and they go down really easily, after careful chewing. I feel that they are those type of foods I have to be super watchful over. Cooked oats or quinoa or beans I have measured 1/2 cup servings and I've had no problems, as soon as I add chicken or other dense protein I get full extremely fast. That's is why NUTs and other experienced sleevers recommend to eat your protein first.

    Also, I am not eating to max out my sleeve, that's the last thing I want to do. I eat to get the best nutrition I can get with the foods I choose. I have eaten a bite too many a few times, and trust me the feeling is AWFUL! And it last for a couple of hours I want to avoid that at all costs, and eating to get full is something that got me into trouble pre op. I could never get full enough ever!

    I recommend you start changing the way you view food. If two tablespoons satisfy your hunger stop there, if it triggers you to eat more to a point of your sleeve getting maxed out and making you ill, I recommend you seek therapy. They can definitely help you set boundaries at family gatherings if that is going to cause you to eat compulsive to appease family. For me, its rice and beans and tortillas and all sorts of other foodstuffs. Learning to say "no thanks, I've had enough" can be difficult when our cultural identities are so closely to our food and gatherings. But if I can learn to say "no thanks" you can too.

    For a tip, Job's tears are really good in replacing rice.

    In Korea a lot of dieters eat it because it aids in weight loss and it tastes so much like rice!!
    It has so much more nutrition than rice so I eat it all the time.

    it looks kinda like giant barley but tastes like rice

    You might wanna try it out! its great for ppl who want extra nutrition while eating some complex carbs

    My bibimbap place will skip the rice, even on the hot stone, and sub shredded veggies. They come out caramelized and fabulous. Love the raw egg, love it with beef and REALLY love it with pork belly.

    It's usually enough for 2 -3 meals when I get the small. Delish!
    Next time someone asks you how much you weigh, tell them one hundred and sexy.
