    Chicken thighs roasted in a 350º oven for 30 minutes. Change the spices based on what you feel like or what you'll be having for lunch the rest of the week. Mix 'n match on the same pan! The one I did today was some oregano, garlic & lemon pepper (Greek) and some chipotle chili powder and fresh ground pepper.

    I like them cold right out of the fridge!

    Having a hubby that cooks, always protein with something to go with it. Tonight it was pork chops topped with peaches, basil and onions. YUM! Last night filets with mushrooms and a broccoli salad. But the seafood is probably my favorite, he smoked salmon today. Or scallops with veggies. I have the best leftovers for lunch at work everyday.

    Shelled sunflower seeds, pumpkin seeds and roasted soybeans. High protein, low carbs and good fat. I mix them and eat as a snack instead of chips or other junk food. High in calories, but they have not slowed my losses.

    Turkey burger seasoned with lost of pepper, onion, garlic, liquid smoke and basil fired or backed. I make them up and freeze then have one everyday with swiss cheese......I don't eat meat

    I have a killer local deli that I frequent and I hate to cook but Here's some of my favs....

    Mashed cauliflower with butter, cheese and Hormel bacon bits.

    Brussels sprouts sautéed with bacon and onions

    Quest chips covered with shredded cheese, broiled to melt the cheese and topped with avocado and salsa

    No pasta lasagna....sliced Yellow squash and zucchini layered with ricotta, mozzarella and Parmesan cheeses, prosciutto, and Italian spices

    Ham, green olive and cream cheese roll ups.

    Baked Sole stuffed with broccoli and mozzarella

    "Pumpkin pie"...Plain Greek Yogurt with Muscle Milk cake batter protein powder and Torani pumpkin pie syrup. Mix in some Kashi Go Lean for a crunchy "crust"

    Waffles made with Kodiac cake or Bob's a Red Mill pancake mix, extra eggs, Unjury unflavored powder, and a bit of vanilla protein powder. Kinda tastes like a cross between a crepe and a pancake. I make them all at once, freeze them and then I have 30 second microwave or toaster waffles whenever I want. I usual eat them with butter and maple syrup, but if you want to be "good" you could top with Greek yogurt and berries.

    Easy-peasy beef chili:

    1 pound ground beef (your favorite mix - lean, round, etc.)
    1 15-ounce can of black beans
    1 15-ounce can of diced tomatoes
    1 envelope McCormick chili seasoning
    1/2 can of water

    Brown the beef in a saucepan. Add the other stuff and mix well. Cover and simmer for at least half an hour (or longer), stirring occasionally.

    When it's the consistency you like best, serve in a bowl with cheddar cheese, sour cream, diced scallions and (if you're in through losing and maintaining your goal weight) a cornbread muffin.

    As we all know, this tastes even better the second day.

    I'm jumping on the chili bandwagon (tis the season). Here is a recipe that I made for my local support group, and it was a hit. Sharing!!


    Ingredients
    2 cans (15.5 oz) BUSH'S® White Chili Beans, undrained
    1 can (10 oz) diced tomatoes and green chiles, undrained
    1 can (14 oz) reduced sodium chicken broth
    1 can (10.5 oz) cream of chicken soup
    1-2 medium jalapenos, seeded and diced
    1 cooked rotisserie chicken, remove meat from bone and dice
    Optional Toppings:
    Shredded Mexican cheese, sour cream, cilantro, tri-color tortilla strips, avocado, lime wedge


    Directions
    1. In a 4-quart stock pot, add 1½ cans of BUSH'S® White Chili Beans, mash the remaining ½ can chili beans with a fork and add to pot.
    2. Add remaining ingredients.
    3. Bring to a boil. Reduce heat and simmer 10 - 15 minutes stirring occasionally.
    4. Add additional toppings, as desired.

    Today I tried mixing cottage cheese with sugar free cheesecake flavored pudding as someone had recommended it. And it didn't turn out right :/ maybe I should have blended it? Hmm

    I DO love orange salad so I mix cottage cheese with sugar free orange jello and sugar free cool whip and that's tasty! My family loves adding fruit to it, but I haven't yet I figure it's just a every once in a while snack. But the protein makes it a thumbs up!
