    Default Crumb coating (Pic Added later)

    So, I've played around with mixtures to make a better crumb coating and I have figured out a good one.

    When you mix ground almonds and finely minced unsweetened coconut together, it resembles bread crumbs.

    Depending upon what you are making, the additional spices change but it's pretty damn good. Yesterday, I made fish sticks (baked) and even my kids scarfed them down. For the fish sticks, the spices I added were salt, pepper, dried parsley, paprika, and tarragon.

    So, low-carb, fake bread crumbs are doable.

    Sounds yummy, except I am allergic to fish....chicken would work good too I bet!

    Absolutely! The spices are different for chicken, of course. The one I use for chicken has Parmesan cheese, garlic and onion powders, paprika, basil, oregano, parsley, salt, and pepper. I skin the chicken before I coat it and I always bake, never fry.

    Oh, and I also use the coating for stuffed pork tenderloin, too.

    Soak some chopped dried fruit and nuts in a nice liqueur, like Cointreau. Pound the crap out of some pork loin chops between some cling film until thin. Season with salt and pepper. Crumble chevre (soft goat cheese, or something similar) on pork, then add the strained nuts and fruit. Roll it up and coat it.

    The spices I use for pork are thyme and rosemary, sometimes marjoram.

    Oh, I just wanted to add this: Why a crumb coating?

    Working with lean meats or skinned poultry can result in a dried-out meal. Adding a crumb coating will protect the meat during cooking, resulting in a juicier end product. Also, remember to rest your meat 5-10 minutes. By using a protein-based crumb product, it's a win-win for us.

    Here's a picture of the fish sticks (cod). I put an apple in the picture as a visual size reference. The smaller plate is mine, the larger plate is my 10 yo DD's dinner (she's saving room for movie popcorn LOL).
