    Default The new way I'm eating my chicken

    I'm sure it's not a new idea, but I'd never heard of it. I saw a recipe for stuffed chicken breast on Facebook. Baked in olive oil, crusted in bread crumbs and stuffed with spinach and pepper jack cheese. I tweaked it

    3 oz. boneless skinless chicken breast - boiled for about 12 minutes in low sodium stock
    1 oz. canned spinach
    1 slice sargento or WW reduced fat pepper jack cheese
    Mrs. Dash Chipotle seasoning

    Filet the chicken breast after cooking
    stuff with spinach and cheese
    sprinkle Mrs. Dash to taste.

    I will tell you it was GOOD! It needed salt, desperately but I have high BP so I'm trying to wean myself from salt so I added pepper LOL

    That sounds good, I love spinach. The pepper jack cheese will make it spicey...thanks for sharing.

    Sounds good! I used to do something similar back in my Atkins days, with spinach and a bit of grated parmesan cheese as the filling.

    Next Sunday I get to start real food, so I'd better get to the grocery store for some chicken breasts
