Since I have to cook for the hubby and kids, I'm having to get creative to ensure I can make something I can eat, as well as they. Tonight, I made something I'm calling Coconut Curry Chicken.
1 tblsp canola oil (or olive or peanut -- depends on what you like)
1 onion, sliced
1 bell pepper, sliced
1 cup butternut squash (optional -- I had this one hand from another meal, and added a sweetness to it)
2 minced garlic
1 lb chicken tenders or thighs
1 can coconut milk
2 cups chicken broth
2 tsp curry powder (may need more, depending on tastes)
2 tsp salt
1 tsp ground chilis or red pepper
Using the oil on med high heat, I sauteed the onion, bell pepper, garlic. Then add chicken and brown. Add coconut milk, broth, curry, salt and pepper. Once it begins to boil, turn to simmer, cover and cook for about an hour. If not enough sauce, add more broth.
I ate a piece of the chicken, a little of the sauce and had cottage cheese on the side. The sauce mixes well with the cottage cheese and gives a great flavor. The kids turn their noses up at cottage cheese, so they get to have rice with theirs.
Cooking this for an hour really tenderizes the chicken, and I can eat it on my soft diet -- just remember to chew well.
