    Since I have to cook for the hubby and kids, I'm having to get creative to ensure I can make something I can eat, as well as they. Tonight, I made something I'm calling Coconut Curry Chicken.
    1 tblsp canola oil (or olive or peanut -- depends on what you like)
    1 onion, sliced
    1 bell pepper, sliced
    1 cup butternut squash (optional -- I had this one hand from another meal, and added a sweetness to it)
    2 minced garlic
    1 lb chicken tenders or thighs
    1 can coconut milk
    2 cups chicken broth
    2 tsp curry powder (may need more, depending on tastes)
    2 tsp salt
    1 tsp ground chilis or red pepper
    Using the oil on med high heat, I sauteed the onion, bell pepper, garlic. Then add chicken and brown. Add coconut milk, broth, curry, salt and pepper. Once it begins to boil, turn to simmer, cover and cook for about an hour. If not enough sauce, add more broth.

    I ate a piece of the chicken, a little of the sauce and had cottage cheese on the side. The sauce mixes well with the cottage cheese and gives a great flavor. The kids turn their noses up at cottage cheese, so they get to have rice with theirs.

    Cooking this for an hour really tenderizes the chicken, and I can eat it on my soft diet -- just remember to chew well.

    Brussels Sprouts - Better Tasting than French Fries! ( I swear, I am telling the truth!)

    This is my favorite recipe for brussels sprouts. It isn't a sleeve recipe, but was one of my favorites for years. I made them tonight & ate probably more than I should, and my stomach feels fine. Easy, fairly quick, so delicious this is one I could binge on if it weren't for my stomach.

    SkinnyOLady... Is that tattoo of a Pugs with glasses????? I'm not a tat person but I LOVE that one!!!! Pugs are like potato chips, you can't have just one. I have 3!

    Just be cool with only eating a moderate portion the first time you try it. My son ate quite a few ( a compliment to the recipe that he thought they were good - he is not a huge brussels sprouts fan) but I know I ate too many. I did have some indigestion 6 hours afterward, nothing terrible but not quite the no problem experience I thought at first. It snuck up on me.

    Hi Kim! I love deviled eggs! I just cannot for the life of me imagine how you eat half of one... Im dead serious too lol do u take a "normal" sized bite? do u lick out the yolk? do you bibble at it? I need to learn this way of eating and fast! lol

    I tried this tonight..DELICIOUS!

    1- 10 oz box frozen spinach, thawed and drained
    16 oz cottage cheese
    6 oz shredded cheddar
    4 or 5 sliced medium to large mushrooms
    3 eggs
    2 tbs butter (I'm thinking this could be omitted)

    Mix together, place in a glass casserole dish or deep pie plate sprayed with PAM and bake at 375 for an hour.

    I don't have the nutritional info, but I'm sure it's high in protein and pretty low carb. Not to mention...yummy as hec

    I developed this recipe from one I found in "The 150 Healthiest 15-Minute Recipes on Earth". The carb count is pretty low around 20g per serving but packs a whole lot of flavor into a pretty simple dish. Plan on this dish taking at least 30 minutes from the time you open the pantry door to plating.

    Sesame Thai Chicken & Broccoli

    Ingredients
    2 Chicken breasts sliced thin across the grain
    ½ cup Thai sweet chilli sauce
    1 tbsp Thai fish sauce
    1 tbsp tamari or soy sauce
    1 tbsp corn starch
    2 tbsp Sesame Oil
    2 tbsp toasted sesame seeds
    1 lb broccoli florets
    3 medium carrots roughly chopped
    1 can bamboo shoots drained
    1 can water chestnuts drained
    2 tbsp thinly sliced ginger

    Preparation
    • In a large pot, steam the carrots for 3-4 minutes then add the broccoli and steam for an additional 2-3 minutes, set aside.
    • While the vegetables are steaming, whisk together the chilli sauce, fish sauce, tamari and corn starch, set aside.
    • Heat the oil in a large skillet or wok over medium high heat, add the chicken and saute till just done.
    • Reduce heat to medium then add the sauce mixture, vegetables, bamboo shoots, water chestnuts and ginger., stir to coat. Continue to cook for 1-2 minutes until glaze is hot and bubbly.
    • Top with the sesame seeds and serve (if you need more heat in your life add some Sriracha.

    I made this the other night and it was so good I barely got any of it because my son ate most of it!

    This is one of my favorite dishes to make for lunch when I have no leftovers. I never make it the same way twice, but this is the base recipe and is pretty darn good as is. Modifications are so easy to this dish; got some green or red pepper, slice it thin and saute with the onions. Got some cilantro you need to get rid of, change the herb package to a Mexican profile and add some zest to your life (add the cilantro just before serving). Got some mozzarella cheese ready to expire, drop the thyme and add in basil and top with the cheese for an Italian flare.

    Hamburger Scramble

    Ingredients
    1 lb lean ground beef
    1 bunch of kale stripped of stems and large veins
    1 medium onion coarsely chopped
    4 oz mushrooms sliced
    1 can fire roasted tomatoes
    1 tsp thyme
    1 tsp oregano
    garlic salt
    black pepper
    olive oil

    Preparation
    • Saute the onion and mushrooms in a large skillet with the olive oil over medium high heat, till onion just begins to brown.
    • Add in the tomatoes and kale and cover tightly, reduce heat to low and simmer about 10 minutes till kale is tender.
    • Remove lid, return heat to medium high and add in crumbled ground beef. Stir in the thyme and oregano. Continue to stir occasionally till beef is just browned through.
    • Season with garlic salt and black pepper to taste.
