    Default Spagetti sauce from scratch - question for pasta?

    This afternoon I started spagetti sauce from scratch - got nearly everything from my garden - fresh tomatoes, chilis, bell peppers, zucchini, summer squash, and fresh rosemary. Now it's happily cooking down and smells divine. My question is: is there anything you eat it on besides white pasta? I'm trying to avoid it, but I can't imagine eating that sauce on anything else. I was wondering if anyone uses whole wheat pasta or anything else (not spagetti squash - ick!). I'm trying to avoid rice as well. I haven't eaten anything today except string cheese, so if I have yogurt or something for snack, is that too many carbs if I just have a cup or so of spagetti noodles? Any advice is totally appreciated!!! I am thinking of all of the good vitamins and minerals in that sauce and so looking forward to it!

    i bought a julianne tool and make zucchini into faux pasta for alfredo. Even the kids liked it. It is not really like pasta but you can fool yourself!

    Pound a chicken breast thin and put some fresh grated parmesean cheese on it. roll chicken breast and put into casserole dish with the seam down. bake at 350 degrees til almost done. ladle sauce over chicken breast and top with a little grated parm. continue to bake til done. serve with fresh veg of your choice or with a heart of romaine salad. Also good to do with lean pork loin chops.

    Zucchini sliced thin length ways can be substituted for lasagna noodles. And if you are going to eat pasta....make sure it is whole wheat. I personally love spaghetti squash!!!

    Once in a while, must have pasta, and with that wonderful home made sauce what else. I buy the smart pasta, it has extra fibre but it is white, cooks and tastes like the real deal.

    Tofu noodles...the come in spaghetti or fetticine cut. The are crunchy not mushy like tofu blocks. The Whole Foods near me sells them but I am sure Trader Joe's, Sprouts or Sunflower Markets carry them. Or you local store can probaly special order them for you. They are yummy, low calorie, low fat and high in protein.

    You might try the shirataki noodles, i think they are made from tofu but they take on the taste of whatevery you put with it. Very low carbs!

    I do use some times (not after surgery yet) whole weat pasta and it is good
    however I like something else better, I make thick crepes (milk, some flower and eggs... way more protein than regular starch product ) and then I cut them as linguini and I mix it with sauce. like tagliatelle yummy

    268 - Weigh before starting pre-op diet on May 14 2012. 20lb loss
    258 - Weight on surgery on May 29 2012. 10lb loss from pre op
    224 - 2 months post op (July 30 2012).
    178 - 7.5 m out. total loss 110, post op 72lb

    Shirataki (tofu/yam flour) noodles can be used, but they don't absorb spaghetti sauce very well. They are better when you're stir frying them as you would lo mein, since the heat/oil helps the noodles soak up the liquids/spices you're cooking with. They will do in a pinch though.

    Zucchini pasta and spaghetti squash are excellent "noodle" alternatives. I like making zucchini parmesan: use a mandolin to cut flat strips of zucchini lengthwise. Sprinkle with salt/pepper and saute in olive oil until just tender on both sides. Layer in a baking dish just like you would lasagna noodles with your sauce, ricotta and parm/mozzarella if you desire. Top with scant panko crumbs seasoned with parm, garlic, parsley, salt, pepper and more cheese. Or just more cheese if you want to skip the crumbs. Heaven! Originally the recipe called for zucchini to be dipped in flour, egg and then panko and then browned on the stovetop, but I like the above version even better!

    Another idea is to se4rve it on cottage cheese -- kind of like lasagne alternative
    or just add meat and eat a bowl of sauce like chili with some parmesan on top (my winter go to meal)

    over here Australia you can buy a vegetable yellow shaped a little longer then a rockmelon but when you boil it and cut it open it has strands inside similar to spagetti, very tasty with sauce but just cant think of its name, maybe someone knows what I am talking about.

    I make lasagna with thin strips of zucchini, tons of other veggies; onions, peppers, garlic, mushrooms, and topped with low fat cheese. Sometimes I'll make turkey meatballs and simmer in homemade sauce (hubby loves this) and spaghetti squash is also a hit at my house. I also make stuffed peppers and pour the sauce over them. I'm not eating pasta of any kind..it's a trigger food with me.

    The brand Dreamfield had a low net carb count. Something like 5 net carbs per serving. I used this a lot pre-surgery. Not at a point were I can have it yet.
