Okay, folks, I am in soft food stage still (and trying to be good!), and tonight I had a great meal. It's something I used to eat, only now I ate a fraction of it! I bought a can of Hormel Corned Beef Hash and put it in the skillet to brown. Once it had crisped up/browned, I poured two beaten eggs over all of it and stirred it around until the eggs were completely cooked. I had probably a fourth or slightly less of the skillet, and here's how the nutritional info stacks up:
Protein: 5 gr for the hash plus the extra from the egg
Carbs: 5 gr
Calories: 88
And it was both delicious and SOFT! I loved it! I've got enough for at least 3 more meals, and maybe 4. I haven't tried the plain corned beef, but if you want to avoid the potatoes that are in the hash I'm sure it would be delish too.
