I have been playing around in the kitchen trying to create high protein meals for myself that I can actually enjoy. Not always an easy task at this point in my journey. It tends to get boring eating cottage cheese, yogurt and protein shakes (None of which, prior to surgery, I was a big fan of to begin with) So I cooked up some ground turkey (26g for 4 oz) added a packet of taco seasoning, put about 2oz of black beans in the food chopper (3g for 2oz ) melted reduced fat shredded fiesta blend cheese in a pot with a little milk (8g for 1oz) - I put the black beans and cheese sauce over the turkey, added a packet of taco bell mild taco sauce and it was so good! One of the tastiest things I've had since surgery. I should tell you I hate turkey too. But ground with taco seasoning, it's not bad at all. Obviously a full serving of all is pretty impossible for me to consume at this point, I can come pretty close... about 3.5-4 oz total of food. But if you can get it all in... It is 37g of protein for one meal! If you want, you could even add a little fat-free sour cream, but I found the cheese sauce to be sufficient! Just thought I'd share in-case anyone else is as big of a Mexican food fan as I am and missing it. This definitely hit the spot. No guilt and protein rich. Enjoy!!!!
