About 3-4 oz of flounder, sauteed in a little bit of lemon infused olive oil. That's about all that I can eat.
Leftovers: I had some leftover roasted Turkey, added some leftover cooked fajita vegetables for flavor, seemed dry, so I added salsa and a big scoop of plain Greek yogurt, sprinkled cheddar cheese on top. I picked out mostly turkey, my husband put his in a tortilla. Sounds weird, but it was pretty good!
Shrimp stir fry minus the rice.
4 oz tillapia fillet rolled in panko and fried onion pieces to taste, then baked. Delicious! A few green beans on the side balance out the "meal" affect. Sugar free tropical Popsicle for dessert. . It may not be fancy, but it's my favorite meal right now.
