    I am having a hard time finding new foods to eat. Still eating semi soft food. But i need some healthy tastefull recipes anyone have some ideas

    White Bean Soup
    2 TB plus 2 tsp extra virgin oil
    16 whole scallions, sliced
    8 cloves garlic, peeled and minced
    4 tsp fresh oregano, chopped
    7 cups low fat, low sodium vegetable broth
    6.5 (19 oz)cans white beans, drained and rinsed
    4 tsp fresh lemon juice
    1/4 tsp kosher salt
    1/2 tsp freshly cracked black pepper
    8 TB grated Parmesan cheese
    In a medium saucepan over medium heat, heat olive oil. Add scallions, garlic, and oregano, and cook, stirring frequently, for about 3 minutes or until scallions begin to soften.
    Stir in veg broth and beans and bring to a boil. Cook for about 10 minutes or until heated through. Using a wooden spoon or a potato masher, lightly mash some beans to thicken soup. Stir in lemon juice and season with salt and pepper.
    Sprinkle with Parmesan cheese and serve.

    Makes 8 servings Takes about 45 min to make with serving size of 1/4 cup it has 275 calories and 14g protein
