Stuffed Acorn Squash

    I just started adding in vegetables the other day, prior to that my carbs came almost exclusively from dairy products. Oh how I have missed veggies!! The reason for my delay in adding them back in has been stomach volume. If I want to have room for veggies, I have to continue drinking protein shakes. I just don't have room yet for both.

    For lunch I had 1/8 of a stuffed small acorn squash. The stuffing contained: sauteed ground chicken, riced cauliflower, diced onion, diced celery, a tiny bit of diced green apple and some fresh cranberries. I used a tsp of organic coconut oil to saute all ingredients while the acorn squash was baking, then stuffed them and continued baking.

    Oh it was so nice to eat real food!!
