I made these amazing Christmas morning macadamia nut pancakes yesterday, and they truly ✨tasted like Christmas to me✨. My partner loved them!!! I froze the rest as I was only able to eat 2/3 of a two-pancakes stack, and he is super disciplined about just eating three. I used a 1/4 measuring cup to pour the batter. Not sure how much calories or nutrients these have, but almond and macadamia nuts have a load of health benefits.
(Most if not all are organic ingredients)
1 cup almond flour
1 cup macadamia nut flour
3 tablespoons raw sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups well-shaken warm buttermilk or whole milk in 3 parts use less if needed
3 tablespoons unsalted butter, melted
2 large eggs
1 teaspoon vanilla
1/4 fine orange rind
1-2 tablespoons of orange juice or substitute orange liqueur for rind and juice.
1/2 cup salted roasted macadamia nuts (2 1/2 oz), chopped
Whisk all ingredients together then pour 1/4 cup batter on to a well greased hot heavy frying pan.
Accompaniment: 100% maple syrup grade B
