    Default Corned Beef Hash

    Okay, folks, I am in soft food stage still (and trying to be good!), and tonight I had a great meal. It's something I used to eat, only now I ate a fraction of it! I bought a can of Hormel Corned Beef Hash and put it in the skillet to brown. Once it had crisped up/browned, I poured two beaten eggs over all of it and stirred it around until the eggs were completely cooked. I had probably a fourth or slightly less of the skillet, and here's how the nutritional info stacks up:

    Protein: 5 gr for the hash plus the extra from the egg
    Carbs: 5 gr
    Calories: 88

    And it was both delicious and SOFT! I loved it! I've got enough for at least 3 more meals, and maybe 4. I haven't tried the plain corned beef, but if you want to avoid the potatoes that are in the hash I'm sure it would be delish too.

    If you've never cooked corned beef hash before, just be aware that it comes out light pink and you want to cook it until it's a dark pink. It takes a while--the first time I cooked it I didn't let it go long enough. The texture is absolutely wonderful though. Love it!

    So you had surgey this month and you are already eating corned beef hash and eggs? Not bad! I'm still new and learning. I'll attend a seminar on pre and post diet in September. I expect to learn a lot there.

    I mostly skipped the pureed stage and went with VERY soft and mushy. And corned beef hash is about as soft and mushy as you can get!
