Great question i just saw this at the health food store and I have a Facebook friend that talks about using it a lot but I do not know much about it. Ive also wondered about Paleo eating.

I mix it with long grain white rice as it has the same cooking length. For my family, I use the following proportions:

    1/2 cup quinoa
    1 cup rice
    3 cups water

Bring to boil over high heat, stirring occasionally. Once boiling, cover and turn heat to very low. Leave on low heat 10 minutes. Take off heat, and let sit for another 10 minutes (without lifting lid). Fluff and serve.

I sometimes make it with broth, or make a pilaf. Essentially, I treat it like rice when it is blended. I'm not a fan of it on its own, though. I find the kernels too flyaway and hard to manage.
